While visiting LA from Atlanta, we were fortunate enough to see our dear sweet friend Amy. And, we were even more fortunate that she wanted to cook with us! How fun!! We decided to bake Molton Lava Cakes, one of our favorite treats that my 10 year old, Alice, loves to make. What is so great about these cakes is that they are gluten free, made with only real foods that include low glycemic flours (to help keep blood sugar spikes at bay). The ooey gooey chocolate will make you forget they are actually Paleo friendly.
Anyway, this recipe is one of the treats in the “Sweet Treats” chapter of my new book Super Paleo Snacks. All of my recipes are gluten free, most are low glycemic (for sustained energy), many are nut-free (even excluding the nut free section) and most take under 15 minutes to prepare! They have to or I wouldn't make them!! The chapters are broken out into different times of the day so you can use the right snacks to your benefit. What’s so fun about these recipes is that while you will see something like “brownies” in the snack book, you will learn that brownies don’t have to be just for desserts or special occasions. Brownie CAN be a great snack, if they are low in sugar and high in healthy fats and protein!
