Quick and Easy Meals

So as some of you already know, I am not really all that great in the kitchen. I have about 5 signature meals that I have full confidence in preparing and serving to others. Normally though, I am spoiled with JC's amazing cooking, my mom's meals, and dining out or doing take out. Eating is probably one of my favorite activities. With being home so much these days and an extremely voracious appetite (thanks to nursing), I needed some other options. When Gourmet Dining Meals contacted me and offered a week's worth of meals, I couldn't turn it down.

For dinner one night, I whipped this up for JC, Cindy, my mom, JC's parents and myself. JC chose this wine, which he said went nicely with the meal.

It was easy and overall, everyone liked it.Then on a different day, I made this one for my mom and myself.

So easy, even I could do it. I added a bit of Pecorino cheese on top. And if I had to compare the 2 meals, the shrimp scampi was definitely favored over the other.
